Some would argue<\/span><span data-contrast=\"auto\">&nbsp;that<\/span><span data-contrast=\"auto\">&nbsp;it\u2019s<\/span><span data-contrast=\"auto\">&nbsp;the act of<\/span><span data-contrast=\"auto\">&nbsp;cooking \u2014<\/span><span data-contrast=\"auto\">&nbsp;whether it\u2019s boiling, broiling, roasting, baking, or barbecuing \u2014 that separates us from every other species on Earth.<\/span><span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n\n\n\n<p><span data-ccp-props=\"{}\">&nbsp;<\/span><span data-contrast=\"auto\">In 1999, Harvard professor of biological anthropology Richard Wrangham published a<\/span><span data-contrast=\"auto\">n article in&nbsp;<\/span><span data-contrast=\"auto\">the&nbsp;<\/span><i><span data-contrast=\"auto\">Current Anthropology&nbsp;<\/span><\/i><span data-contrast=\"auto\">journal c<\/span><span data-contrast=\"auto\">alled \u201cThe Raw&nbsp;<\/span><span data-contrast=\"auto\">and&nbsp;<\/span><span data-contrast=\"auto\">the Stolen: Cooking and the Ecology of Human Origins<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u201d<\/span><span data-contrast=\"auto\">&nbsp;Known as \u201cthe cooking hypothesis,\u201d Wrangham\u2019s&nbsp;<\/span><span data-contrast=\"auto\">groundbreaking new&nbsp;<\/span><span data-contrast=\"auto\">theory&nbsp;<\/span><span data-contrast=\"auto\">of human evolution&nbsp;<\/span><span data-contrast=\"auto\">proposed that&nbsp;<\/span><span data-contrast=\"auto\">taming fire to cook food&nbsp;<\/span><span data-contrast=\"auto\">changed the course of human evolution.<\/span><span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n\n\n\n<p><span data-ccp-props=\"{}\">&nbsp;<\/span><span data-contrast=\"auto\">In his article and his 2009 book&nbsp;<\/span><i><span data-contrast=\"auto\">Catching Fire: How Cooking Made Us Human,&nbsp;<\/span><\/i><span data-contrast=\"auto\">Wrangham argued that cooking allowed our human ancestors to process food more efficiently \u2014 and&nbsp;<\/span><span data-contrast=\"auto\">this change&nbsp;<\/span><span data-contrast=\"auto\">had a profound impact on&nbsp;<\/span><span data-contrast=\"auto\">evolution. While all other animals eat raw foods,<\/span><span data-contrast=\"auto\">&nbsp;Wrangham theorize<\/span><span data-contrast=\"auto\">d<\/span><span data-contrast=\"auto\">&nbsp;that<\/span><span data-contrast=\"auto\">&nbsp;our ancestors<\/span><i><span data-contrast=\"auto\">&nbsp;<\/span><\/i><span data-contrast=\"auto\">began cooking their food&nbsp;<\/span><span data-contrast=\"auto\">some 1.8<\/span><span data-contrast=\"auto\">&nbsp;million years ago, a change that gave early man the ability to process food more efficiently.<\/span><span data-contrast=\"auto\">&nbsp;It takes a long time, and a very large jaw and teeth, to grind down raw meat and plant matter.<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Before our ancestors learned how to cook, Wrangham estimate<\/span><span data-contrast=\"auto\">d<\/span><span data-contrast=\"auto\">&nbsp;that half of their waking hours were spent simply chewing<\/span><span data-contrast=\"auto\">&nbsp;enough food to subsi<\/span><span data-contrast=\"auto\">st<\/span><span data-contrast=\"auto\">, leaving little time for anything else. Cooking alters the chemical structure of food,&nbsp;<\/span><span data-contrast=\"auto\">breaking down the connective tissues in meat, and soften<\/span><span data-contrast=\"auto\">ing<\/span><span data-contrast=\"auto\">&nbsp;the cells of plants to release their starches and fats. This makes cooked food&nbsp;<\/span><span data-contrast=\"auto\">easier to chew and digest<\/span><span data-contrast=\"auto\">. This also<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">help<\/span><span data-contrast=\"auto\">s&nbsp;<\/span><span data-contrast=\"auto\">the body to use&nbsp;<\/span><span data-contrast=\"auto\">less energy&nbsp;<\/span><span data-contrast=\"auto\">to convert<\/span><span data-contrast=\"auto\"> food into calories. Once the cooking was introduced, he estimate<\/span><span data-contrast=\"auto\">d<\/span><span data-contrast=\"auto\">&nbsp;that our ancestors had an extra four hours in their day \u2014 time that could be spent hunting<\/span><span data-contrast=\"auto\">,&nbsp;<\/span><span data-contrast=\"auto\">foraging<\/span><span data-contrast=\"auto\">, and&nbsp;<\/span><span data-contrast=\"auto\">slowly beginning to&nbsp;<\/span><span data-contrast=\"auto\">organiz<\/span><span data-contrast=\"auto\">e&nbsp;<\/span><span data-contrast=\"auto\">into societies<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><span data-contrast=\"auto\">W<\/span><span data-contrast=\"auto\">rangham&nbsp;<\/span><span data-contrast=\"auto\">explained<\/span><span data-contrast=\"auto\">, \u201c<\/span><span data-contrast=\"auto\">The extra energy gave the first cooks biological advantages. They survived and reproduced better than before. Their genes spread. Their bodies responded by biologically adapting to cooked food, shaped by natural selection to take maximum advantage of the new <a class=\"wpil_keyword_link\" href=\"https:\/\/qa.cookingenie.com\/content\/blog\/the-path-to-a-healthier-you-building-a-balanced-diet\/\"   title=\"The Path to a Healthier You: Building a Balanced Diet\" data-wpil-keyword-link=\"linked\"  data-wpil-monitor-id=\"171\">diet<\/a>. There were changes in anatomy, physiology, ecology, life history, psychology, and society.\u201d<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n\n\n\n<p><span data-contrast=\"auto\">This<\/span><span data-contrast=\"auto\"> higher calorie, higher-quality diet lead to the&nbsp;<\/span><span data-contrast=\"auto\">evolution&nbsp;<\/span><span data-contrast=\"auto\">of bigger brains<\/span><span data-contrast=\"auto\">&nbsp;and bodies<\/span><span data-contrast=\"auto\">, and smaller jaws and teeth<\/span><span data-contrast=\"auto\">\u2014a transformation that&nbsp;<\/span><span data-contrast=\"auto\">gradually&nbsp;<\/span><span data-contrast=\"auto\">resulted in modern man.&nbsp;<\/span><span data-contrast=\"auto\">From the control of fire<\/span><span data-contrast=\"auto\">&nbsp;and the growth in brain size<\/span><span data-contrast=\"auto\">, it\u2019s not such a large leap to the development of dedicated hearths, the introduction of pottery and other tools for cooking, and the domestication of plants and animals.&nbsp;<\/span><span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n\n\n\n<p class=\"has-text-align-center\">(<strong>Also Read<\/strong> &#8211; What eating healthy looks like)<\/p>\n\n\n\n<p><span data-ccp-props=\"{}\">&nbsp;<\/span><span data-contrast=\"auto\">Wrangham\u2019s theory is, of course, just that: a theory.&nbsp;<\/span><span data-contrast=\"auto\">Archaeological history to support control of fire&nbsp;<\/span><span data-contrast=\"auto\">1.8 million years ago has<\/span><span data-contrast=\"auto\">&nbsp;not yet been found<\/span><span data-contrast=\"auto\">, but the recent discovery of ash in a South African cave suggests that&nbsp;<\/span><span data-contrast=\"auto\">our ancestors<\/span><span data-contrast=\"auto\">&nbsp;were controlling fire at least 1 million years ago \u2014\u202ffar earlier than previous evidence suggest<\/span><span data-contrast=\"auto\">ed<\/span><span data-contrast=\"auto\">.
